Classic Red Sauce Kelp Noodles

Ingredients:
- 1 package organic kelp noodles .
- 1 jar @raoshomemade marinara .
- 1 small box organic small tomatoes .
- 2 handfuls fresh spinach .
- 1/4 c pine nuts (optional) .
- 3 garlic cloves .
- 1/4-1/3 organic coco milk .
- pink salt + pepper, to taste .
- 1 tsp chili powder .
- 1/2 c sliced portobello mushrooms .
- 1/2 tbsp olive oil .
- 1/4 red onion, chopped .

Method:
1. Sauté veggies: add olive oil, salt, pepper, chili powder, mushrooms, onions to pan and cook on medium heat until onions and mushrooms turn a brown color .
2. Meanwhile, bake tomatoes at 375F for 15 minutes .
3. Add spinach to pan and red sauce. Heat until spinach cooks down .
4. Rinse noodles and pay dry excess water. Break noodles apart while adding them to vegetable pan .
5. Add in tomatoes and coco milk. Stir and Enjoy! 😊
