Minestrone Soup and Butter Lettuce Wraps

Hereā€™s a delicious Minestrone soup x butter lettuce wrap recipe for you šŸŒ±šŸ’š .

- 1/2-1 c vegetable brothĀ 
- 1 garlic clove, choppedĀ 
- cumin, to tasteĀ 
- 1 c cauliflower riceĀ 
- 1/4 c black beansĀ 
- 1/4 c white beansĀ 
- 1 large carrot, quarteredĀ 
- 1 celery stockĀ 
- 2 c fresh spinach, choppedĀ 
- butter lettuce leaves, for tacosĀ 
- 1 tsp tahini, drizzledĀ 
- 1/2 limeĀ 
- sesame seeds, for garnish (optional)Ā 
- cumin, to tasteĀ 
- pepper, to tasteĀ 
- hot sauce (optional)Ā 

1. Add 1/4c broth, cauliflower rice, garlic clove, cumin, and pepper to small sauce pan. Cover and let sit on low heat for 5-6 minutes.
2. Meanwhile, add 1-2 inches water to a pot, and place the chopped celery and carrot. Cover and let simmer for 6-7 minutes.
3. Cut up all the spinach into long strips. Add the 1/4c white beans and 1/4c black beans to the saucepan and cover another 2-3 minutes.
4. Add steamed veggies, chopped spinach and last 1/4c broth to the saucepan. Let warm for a few minutes.
5. Place in a small, deep bowl or shallow, wide bowl. Serve with butter lettuce leaves for wraps. .
Toppings: tahini, hot sauce, sesame seeds (garnish), lime .
**For a creamy sauce, add 1/4 c canned coco mylk .
