Red Curry Coconut over Brown Rice

This dish is one of my FAVORITES. Enjoy it over brown rice or quinoa, along with leftovers the following day. It is loaded with delicious and creamy flavors and keeps you feeling full for hours. 

Inspired by one of many recipes shared in Sakara’s 10-day reset kit!

Red Curry Coconut over Brown Rice Recipe
- 1 tbsp coconut oil 
- 1 tbsp red curry paste 
- 1/4 c yellow onion 
- 1 broccoli floret 
- 1/2 large carrot 
- 2 c fresh spinach, loosely packed 
- 1/2 c eggplant, diced 
- 1 c coconut milk 
- 1/2 c brown rice 

1. Melt the coconut oil and red curry paste in a pan, and add onion. Sauté for 2-3 minutes 
2. Add the carrots, broccoli, and eggplant and sauté for another 3 minutes 
3. Add coconut milk and bring it to a simmer 
4. Pour over cooked brown rice, and enjoy 😊
