Strawberry Vanilla-Maple Raw Cake

Strawberry Vanilla-Maple Raw Cake .

Crust:
1 c walnuts
1.5 c shredded coconut
1 c cashews
1/4 c blackstrap molasses
1/8 tsp pink Himalayan salt .


Maple layer:
4 c cashews, soaked overnight
1 c coco oil
3/4 c honey or agave
3/4 c black strap molasses
1.5 c coco milk
1 c + 1 tbsp water
1/8 tsp Himalayan pink salt .

Vanilla Layer:
2 c cashews, soaked overnight
1/2 c coconut oil
1.5 c @lakanto maple syrup
1 3/4 c coco milk
1-2 tsp vanilla
Pinch of pink salt .

Strawberry Layer:
5 c cashews, soaked overnight
1 c coco oil
1 1/4 c honey or agave
1.5 c coco milk
1 c + 1 tbsp water
1/8 tsp himalayan pink salt
1/4 c freeze dried strawberries (save 1 c mix for the frosting) .

Steps:
1. Soak cashews night before and drain before using.
2. For crust: blend ingredients together and press into a 24x24 spring pan.
3. For layers: blend ingredients for each layer (wash food processor between each use) until smooth.
4. Pour MAPLE layer atop crust and let set in freezer for 1 hour. Pour the vanilla and strawberry mix into separate bowls and refrigerate.
5. After 1 hour, spread VANILLA over maple layer. Let set in freezer for 1 hour.
6. Pour STRAWBERRY layer atop vanilla layer and freeze for 4-6 hours before serving. (Use last cup of pink mix as frosting + dried rose petals) **cut into bars and store in fridge up to 1 week.**
