Vanilla Chia and Creamy Chocolate Nicecream

I love this combo in the morning or for a 3pm afternoon snack, especially when it's hot out! Both parts of the recipes are delicious, and can be enjoyed separately. I personally love the vanilla chocolate mix when I have a little more prep time. Delicious and healthy chia seed pudding is tasty and keeps you full for hours!

Vanilla Chia Layer Recipe 

- 2 c coconut milk (your preference)

- 1/2 c chia seeds 

- 1/2 tsp vanilla essence 

- 1/4 tsp cinnamon powder (optional) 

- add couple of berries, I love blueberries 

Put all of the ingredients in a glass jar or cup, stir and leave in the fridge over night. If you want to enjoy the same day, leave in the fridge for at 4 hours to allow the chia seeds to expand. 

FYI you can also use different liquids for the pudding, like mango puree or fruit juices are  y u u u m m y y. 

Creamy Chocolate Nicecream Layer

- 2-3 frozen bananas (frozen the night before)

- 1 tsp vanilla essence

- 3-4 pitted medjool dates

- 2 tbsp cocoa powder

- 1 tbsp sunflower butter 

- add your own chocolate chips (I love the enjoylife brand)
