Healthy Baby Cake (For Baby's First Birthday)

This healthy smash cake recipe is perfect for your baby’s first birthday! Naturally sweetened with banana and coconut.. or if you choose my caramel frosting- dates.

 I hope you enjoy it as much as Jaxon did and all his buddies!!!

**FROSTING NOTE:

For coconut whip cream or greek yogurt, I found spreading this on my cake 5 minutes before serving, is best. It tends to melt otherwise. Date caramel frosting can be spread over baked goodies the night before and still look perfect at your party!

Baby Smash Cake (Baby's first birthday)

servings: one 9 in round, two 4-inch round 

INGREDIENTS (for 

- white rice flour (3 tablespoons) 

- 1 banana, (smashed with a fork)

- shredded carrot (2 large) 

- baking soda (1/2 tsp) 

- 2 egg, separated (whites and yellows) 

STEPS

Preheat oven to 350F (**have oven ready to put cake in immediately) 

1. Crack eggs and separate egg whites from yolks in 2 bowls. 
2. Add banana and shredded carrot to bowl with egg yolks and mash using a fork, until thoroughly combined. 

3. Fold in rice flour to bowl. 

4. Using a hand blender, whip egg white into the perfect airy form. 

5. Combine the bowls into one and mix. Pour into a parchment lined pan (I also spray pan sides with coconut/avocado oil spray). Bake at 350F until edges are golden brown (you should be able to smell the cake when it's about ready). 

**Toothpick test - when you feel cake is ready, you should be able to insert a toothpick into the center of the cake and it come out clean. 

 

Date Caramel Frosting

- 1 cups medjool dates, soaked in hot water

- 1/2 jar of coconut cream (full fat)

- carob powder (optional) 

 

1. Rinse dates and soak in hot water for 10 minutes.

2. Using a blender or food processor, add dates (make sure to remove pits from inside) and slowly add in coconut cream until thick, creamy and combined. OPTIONAL: add in carob powder for a chocolatey flavor. 

3. Spread over baked cake and enjoy!

 

**Carob powder is a no-caffeine option for chocolate lovers. Carob powder is plant-derived and safe for babies to consume.
