Guacamole Deviled Eggs

Posted by Nikki Kovacs on

Egg whites stuffed with guacamole make a simple, nutritious, and baby-friendly recipe that’s perfect for introducing soft textures and healthy fats. To prepare, cook hard-boiled eggs and carefully remove the yolks, leaving the whites intact as little “boats.” Mash ripe avocado into a smooth guacamole, optionally adding a pinch of cumin or finely chopped herbs for flavor. Spoon the guacamole into the egg white halves, creating a colorful and creamy snack. This dish provides a balanced source of protein, healthy fats, and essential nutrients, ideal for babies around 8-10 months old, depending on their readiness for eggs.

INGREDIENTS:

  • 2 hard boiled eggs
  • 1 small avocado
  • a sprinkle of: onion powder, garlic powder, pink salt, pepper
  • *OPTIONAL: splash of lemon or lime juice

STEPS:

  1. Put eggs in a small pot and fill with water, until about 1 inch above eggs (eggs must be submerged).
  2. Boil water on medium heat. Once boiling, cook eggs for 10 minutes.
  3. Place cooked eggs in cold or ice water. This will making peeling the shell easy!
  4. Remove yolks from egg.
  5. Spoon in baby-friendly guacamole to the egg white "boats."

Prepare baby-friendly guacamole:

  1. Add avocado to a small bowl.
  2. Sprinkle in spices (just enough for flavor).
  3. Mash together using a fork.

**To make grabbing food more baby-friendly: cut the egg-guac boats in half. Enjoy!
