Banana Coconut Smoothie I made this yummy treat as a midday snack to celebrate St. Patrick's day. The consistency is creamy, and about half way through it I was full! It's perfect when you have a long day ahead of you. The next time I make this, there will definitely be a few drops of mint essence & 1-2 mint leaves added.  Enjoy!! Toasted Pumpkin Seeds

Toasted Pumpkin seeds are crunchy and savory, and make great toppings for meals like soups and salads. I recently made a sweet potato cauliflower soup and these pumpkin seeds were the perfect addition!  Toasted Pumpkin Seeds Recipe Ingredients: 1.5 c unsalted Pumpkin seeds 2 tsp olive oil  Dash of salt Dash of turmeric  Dash of paprika (optional)  Dash of garlic powder Preheat your oven to 350F. Mix all your ingredients together and, spread over a cooking pan. Bake for 10-20 minutes, or until seeds are golden green/brown in color. Enjoy!!
